Christmas Dinner Menu
I think I figured out the menu for Christmas dinner tomorrow night.
Appetizer - Sweet potato pecan fritters
Soup - Pumpkin apple ginger soup
Salad - Spinach salad with toasted almonds, fried rosemary and garlic-herb vinaigrette
Entre - Cornish game hen with blueberry coulis over lemon rosemary couscous
Dessert - Carmelized pineapple with coconut almond ice cream
The coolest part is that, thanks to my rosemary-bush-that-doubles-as-a-Christmas-tree and a great deal at Sprouts on fresh blueberries and unshelled almonds, this is an extremely cheap menu — even if it is going to be a full day of cooking.
OTOH, it’s not like I have anything else to do tomorrow.
