Spinach Salad with Toasted Almonds, Bacon & Oranges

I love spinach salad. It’s my favorite. And it’s just about the only way I actually like to eat spinach (can’t stand it cooked). Normally, I make spinach salad with a fruit-based vinaigrette, but because the over-all meal on Christmas had a lot of sweetness to it, I wanted a more savory approach this go around.
The most obvious ingredients:
Baby spinach
Orange wedges
Toasted whole almonds
Bacon pieces
Since I put everything but the kitchen sink into the dressing, this is just a general list of ingredients I used:
Olive oil
Balsamic
Bacon drippings
Crushed garlic
Cumin seed
Carroway seed
Minced fresh rosemary
Honey
Brown mustard
Blend it all together and let it sit before using, ideally over night. Add other spices to taste.
Dress spinach leaves with dressing. Plate, and sprinkle bacon pieces and toasted almonds on top. Add orange wedges either on top or around the border, as desired.
