Watercress & Lo Mein Salad

Cafeteria food sucks. And the cafeteria at the client office in Philly is not typically an exception. I have to say, though, today’s pre-made salad was surprisingly good. And I want to capture it here so that I don’t forget about it, because it’s got some ingredients I am not in the habit of using.

Best as I can tell, here’s what’s in it:

Watercress
Lo Mein noodles
Peeled cucumber
Red onions
Artichoke hearts
Cherry tomatoes (which, naturally, I removed — Yuck!)
Red wine vinaigrette

I really have never experimented with watercress. I need to try checking it out, though, because it was actually really good in this salad, and I’ve heard of several different ways to prepare it lately, all of which are making me a bit curious.
